The final soup. While my direction has changed throughout this inquiry project, I always had this soup in the back of my mind as my grand finale. This is the soup that inspired me to take on this project as my Fiancee and I both enjoyed a store bought Butternut Squash soup. It had become a staple and an easy pick in the winter months. Now it was my turn to try and create this recipe from scratch using some of the culinary techniques I had learned throughout this process. It’s go time!
For this recipe, I took some inspiration from Kathryne Taylor’s Cookie and Kate website. I wanted to find a recipe that I could roast and blend, but where I adapted it was in the inclusion of cottage cheese and more roasted vegetables. I wanted to recreate the warmth and deliciousness that this store bought version managed to bring us.

Soup Process & Notes
- Wholesome Soup
- This ended up being such a nice way to finish up my inquiry project on SOUP!
- It was warm and rich with a superb texture.
- Roasting & Blending
- Check out the photos below for how the vegetables turned out.
- Roasting before blending definitely added a certain smokey or crispy taste to the soup that I was not expecting.
- Homemade > Store Bought
- This recipe secured the idea that, despite the cost of time, making a soup from scratch is usually better than buying a premade one from the store.
- I could say the statement above for really any of the soups I made throughout this project, but I feel like I have developed a passion for cooking, specifically soup
Check out some of the photos I captured of creating this soup. I really like the before and after shot of the roasted vegetables 🙂
