I’m looking to get back in the win column with this next soup. While Soup #2 may not have reached the heights that Soup #1 did, I’m confident this one will be a winner, even if it’s just on title alone!
Originally seen on an Instagram story, Swamp Soup by Meredith Hayden (Wishbone Kitchen) instantly grabbed my attention as the next recipe I had to try. I’m not one to judge a book by it’s cover and I’m sure glad I didn’t with this soup!
Soup Process & Notes
- I tried something new and loved it!
- Swamp Soup was incredibly flavourful and filling. (I still went back for seconds though)
- Spinach overload… or so I thought!
- Usually I’m not a big spinach guy, but I thought cooking and then blending the spinach made for a really nice texture alongside the rice.
- Felt super healthy eating too so that’s always a plus
- Spice optional
- My Fiancee is not a big spice person so she requested that I leave the jalapeños out of the recipe.
- I thought the soup was still really solid without the spice, but I like a little bit of kick and ended up putting some jalapeños in after the fact
- Blending over chopping
- I forget that chopping is not the only way to achieve breaking larger ingredients down into soup sized bits
- Blending simplified and sped up the process, which allowed for me to be more efficient in my soup making endeavour. Good to know for next time!
