Cooking has always been a sneaky interest of mine. I find good food rewarding, and I love that cooking offers a balance of precision and flexibility. It’s a blend that suits my personality well, and continually piques my curiosity. It was a no-brainer for me to take advantage of the openness of this inquiry project and focus on a type of food that offers some of the most experimentation out there: SOUP! I will be finding different soup recipes and cooking one every week for the rest of the semester. My goal by the end of this project will be to either have 10(ish) solid soup recipes on hand or try a bunch and perfect a favourite so that I can use it as a staple meal for when I have my own family 🙂
I wanted to keep it simple with my first soup and what better option than a Chicken Noodle Soup? My fiancé found this great recipe from a cookbook called The Anti-Inflammatory Cookbook by Krissy Carbo. (While I won’t post the full breakdown of the recipe due to potential copyright infringement, I will provide some of the ingredients, as well as highlights from the cooking experience.)
This delicious soup not only sent me back for seconds, but it also boasted some healthy anti-inflammatory properties through a nice blend of vegetables and chicken. Alongside the spinach, carrot, celery, onion, garlic, mushrooms, and thyme, I also added in some gluten-free noodles to round out this homey soup. All in all, this soup took less than 30 minutes to cook and was super easy to follow along.

Soup Process & Notes
- As this was my first crack at cooking soups, I wanted to be disciplined and follow the recipe to a tee. No reason to get wild with it on the first go, right?
- Wrong! This recipe did not call for noodles, but I couldn’t bear to think of a chicken soup without the noodles.
- Celery on its own: not a fan
- Celery in a soup: game changer
- I was shocked at how much flavour and texture celery added to a soup. Will be looking to add on future soups should I want to go off the recipe again!

- Another audible I accidentally pulled with this soup was with the broth amount…
- I was short 1.5 cups of broth, but ended up substituting that with water and it turned out alright
- One thing I will look to try on future soups is creating my own broth instead of using a premade one from the store
Overall, this Chicken Noodle Soup set the bar high. I could see myself coming back to this recipe since it was so easy and flavourful. This was a great start of my inquiry project and I look forward to seeing what recipes I find next!
